Chicken & Waffles is a delicious and wondrous concoction of salty & sweet, comfort food and whimsical dream, rendered to ashes and then taking flight, with Matty Metcalfe playing accordion and Catherine Monnes playing violin and cello.
Chef Troy Sheller of En-Flux is a Lexington, VA native. He specializes in the American Gastro style and brings with him a passion for avant-garde and authentic cooking that brings people together.
