Skin Contact Chardonnay

First vintage. The skin contact and barrel aging influences a broad mouthfeel with soft and structured tannins. Notes of apricot, cooked apple and dried citrus lead to subtle aromas of savory herbs and baking spices. Dry. Fermented like a red wine, this skin contact Chardonnay displays tannins and texture often associated with red wines. This Chardonnay is harvested later than most used for white wine, allowing the fruit to gain additional sugar, lower acid and ripen phenolic. Fermented whole cluster, 3 weeks on the skins and stems.
