A Virginian Meritage-style blend. Corotoman is a blend of 42% Cab. Sauvignon, 33% Cab. Franc, 21% Merlot, and 4% Petite Verdot. Hints of both red and black fruit lead from the glass followed by a hint of earth, char, and a sweet vanilla note. The palate is full of cherry, blackberry, cassis flavors with notes of plum and violet underneath. The wine features a refined tannin structure along with a solid core of acidity down the center of the palate that keeps the wine fresh and focused leading to a supple finish which lingers nicely. This wine makes great company to New York strip, smashed potatoes, and steamed asparagus.
