The 2014 Petit Verdot “Paul Shaffer 4th Edition” is made using 100% Petit Verdot and shows intense aromas and flavors of violets followed by plum, blackberries, currants, black pepper and toasted vanilla bean. Small lot fermented. Punched down several times daily through fermentation and once a day during extended maceration helping to extract deeper color and soft tannins. 16 months of aging in French oak barrels help to add complex aromas of tobacco and cedar as well as giving structure for long temp cellaring.
