Notes from the CiderMaker: Themed from a statement in William Coxe’s book on cider published in 1817 ­— ‘The finest liquor I ever have seen, was made from the [Hewes] crab, with a small portion of the Harrison apple of Newark, and the Winesap of West-Jersey.’ This cider is our attempt to pay homage to William Coxe and our early American cider culture. It is comprised of these three cultivars with varying concentrations of each depending on availability. The complex flavors of both Hewes Crab and Harrison stand out to make a crisp and complex amber cider.

Flavor: Tart pineapple and mango. Full body with a lingering finish.

Food Pairings: Ceviche; stir-fry; tomato based dishes
