Notes from the CiderMaker: The Winesap is a classic cider variety from the mid-Atlantic region that survived the decline of American cider because of its great culinary and dessert characteristics. The cider it produces has a nice sharp finish in a mineral forward cider.

Flavor: Ripe apple with notes of apple peel and black tea with lemon. Medium body with a crisp minerality and a long finish.

Food Pairings: Salty ham, porkchops.
