This single varietal came from an orchard at 3,200 feet in elevation in Highland County. These trees are grown naturally without sprays or fertilizer applied, creating a more intense depth of flavor. This cider expresses the apple variety to a tee, with bright acidity, pepper notes, and minerality that is common from Highland apples. Fresh apple comes through mid palate and ends with soft tannins and a lingering acidity that begs for another sip.
