Brave the deck on a crisp Sunday afternoon. A young Cabernet loves grilled dishes, as the charred nature of the meat mirrors the edge of the tannin in the wine. If you serve this wine with a pepper crusted grilled tuna steak, swordfish or shark the pairing would be spectacular…and for vegetables, fear not, it pairs well with bitter vegetables like eggplant, arugula or radicchio. As for cheese, the standard rule of ‘matching intensity’ does not apply. Cabernet is best served with mild to moderate cheeses. This Cab should be served slightly chilled at 60◦- 65◦ F.
