Walsh Family Wine Plateau

Pétillant Natural is a very old winemaking style which the French call “method ancestral." To create these lightly-effervescent wines, the fermenting juice is bottled before it finishes fermentation, so that the bottle captures some of the natural carbon dioxide created during fermentation. This means we get a lightly-fizzy wine, and also some sediment at the bottom of the bottle.

These wines are interesting because they tend to show some variation from bottle to bottle, and also because they require very little (if any) additives in the winemaking process. Our hope with our Rose Plateau is to capture the fresh and fruity aromatics of an early pick Cabernet Franc and compliment them with some frothy, light bubbles.

This wine is Spring in a bottle. Fresh, aromatic, spritzy, joyous, and refreshing.
