Riesling, epitomizing the harmony between sugar and acid, is versatile enough to be responsible for some of the world’s best dessert wines, and yet wonderful even in a bone-dry style. With stone fruit and tropical flavors, Riesling is usually made into a varietal wine, where its high acidity can balance out intense sweetness or highlight food pairings to their maximum advantage. It pairs especially well with a Virginia sugar-cured ham, or can complement roast turkey and pork or sweeter vegetables such as coconut or red onion.
